Lemon Drizzle Cake
What is not to love about cake! In this blog post, I will be teaching you how to become that star baker with this gorgeous recipe.This recipe can also be altered to your own taste as it is a basic sponge cake with a few added elements.
Ingredients
- 2 large eggs
- 90g of self-raising flour
- 90g of softened butter
- 90g of caster sugar
- a level teaspoon of baking powder
- A lemon
- 50g of granulated sugar
- A lemon
- A lime
Method
- 1.Preheat the oven to 180ºC, gas 4.Next Measure out your ingredients. I advise having your eggs and butter at room temperature.
- 2.Beat together the eggs, flour, caster sugar, butter, baking powder and lemon zest until smooth in a large mixing bowl and pour into the prepared tin.You can add as much zest as you want! I wanted my cake to be extra zingy so I grated the whole lemon zest in.
- 3.Bake in the pre-heated oven for about 35 mins, or until golden brown, shrinking away from the sides of the tin and springy to the touch.To tell if it is cooked, slowly push a wooden skewer into the cake making sure you get to the bottom.Take it out.If there is any mixture on the stick leave it in for a couple more minutes.
- 4.While the cake is still warm, make the lemon drizzle topping. Mix together the sugar and lemon juice, and pour over the warm cake.This gives the cake some added texture and is a delish glaze.
- 5.Leave to cool a little, serve and enjoy!
